While I am love posting about the Food Matters project, it seems to have taken me away from my love of baking. So this week, you get two recipes, one on the healthier side (thanks Food Matters Project) and this recipe for oatmeal cookies. I prefer raisins in my cookies and Eric likes chocolate so I split the batch and made half to suit both our needs. Yes, one does need cookies!
Oatmeal Raisin Cookies
Recipe Adapted from Robin Hood
¾ cup butter
¾ cup brown sugar, packed
½ cup sugar
2 tbsp dark rum
2 tsp vanilla
¾ cup all purpose flour
¾ tsp baking soda
2 ½ cups rolled oats
1 ½ cups of raisins or chocolate chips (your choice but I suggest raisins!)
Preheat the oven to 350ºF (180ºC)
Cream first 6 ingredients together on medium speed of electric mixer until light and creamy.
In a separate bowl, combine flour and baking soda. Add to creamed mixture, beating on low speed until blended.
Stir in oats and raisins/ chocolate chips.
Drop dough by heaping spoonfuls onto greased or parchment paper lined baking sheets.
Bake at for 12-15 minutes, or until light golden. Don’t overbake.
