This week’s Food Matters Project recipe is Joanne’s pick. Joanne from Eats Well with Others choose Curried Tomato Soup with Hard-boiled Eggs as our recipe. Being the picky eater that I am, I loathe hard boiled eggs. I also hate cauliflower. So my answer to this soup was to leave out the hard boiled eggs to the puree the crap out of it.

To puree the soup, I took it off the heat and used my hand blender directly in the pot. I also added 1 tsp of cinnamon and 1/2 tsp of chilli flakes to increase the heat. The soup was amazing! Perfect with a grilled cheese sandwich and glass of milk. I felt like I was 10 again, with a more sophisticated tomato soup of course!
